Gastronorm sized pans for combi ovens have LloydPans Dura-Kote (DK) finish which provides a permanent stick-resistant coating and is metal utensil safe. Bakes evenly and browns efficiently. Made from 16-gauge aluminum, these hotel pans are built to withstand the everyday rigors of restaurant and foodservice baking. Hotel pans can be stacked for efficient storage or stacked with food items holding or proofing. Gastronorm sizing provides an industry standard for pans, originating in Europe. The standard full size hotel pan is the base for this sizing and is the GN 1/1. Note: Sizes are converted from millimeters and rounded to the nearest 1/8th inch. All LloydPans that feature our Pre Seasoned Tuff-Kote (PSTK), Silver-Kote, and Dura-Kote are oven safe to 700° when empty. However, the introduction of food brings with it a natural moisture barrier that keeps the surface of the pans cooler and making it possible for them to withstand significantly higher temperatures without any resulting damage. Even wood burning ovens that sustain temperatures of 900° + are not a threat to the integrity of our pans as long as the food that’s being prepared on them is closely monitored so that it isn’t burned.
