Bairds Chocolate Malt 450-550L is much darker with more intense flavors than standard chocolate malts. Imparts chocolate, roasted, toasty, sharp, cocoa flavors and some bitterness. Colors are deep brown, mahogany and rich darkness. The rich chocolate and coffee flavors and aroma are notable in every way. Chocolate malt is used in the production of Porters and sweet Stouts. Chocolate malt has a rich chocolate and coffee flavor and aroma with a light astringency. A great deal of care is needed in its use due to the intense color and full-bodied flavor. Typically used at a rate of 5% of grist.
